Spaghetti Squash with Freshly Made SalsaAs a fan of the deliciousness that is spaghetti with tomato sauce, I wanted to try something new…more on the whole foods option. Baking spaghetti squash is a quick and easy alternative to the processed pasta we all love yet feel overly heavy after having it.This took me merely 25 minutes, if not less, and in a blink of an eye I was enjoying my freshly made tomato sauce over some tasty spaghetti.

Ingredients:

1 spaghetti squash
1 can whole tomatoes
oregano leaves
1/2 small chili pepper, chopped
1 tsp nutritional yeast
1 125ml can black olives
dash of sea salt
mozzarella cheese (optional)

Spaghetti Squash with Freshly Made Salsa

Preparation:

Preheat oven at 400 degrees.

Cut squash in half, place in baking sheet and bake for approximately 20 minutes.

In a bowl, smash tomatoes enough to create a chunky salsa. Stir in other ingredients.

Take squash out of oven, with fork scrape out inside of squash.

To serve, top spaghetti squash with your freshly made salsa. For kicks, you can add a few chunks of mozzarella.
