Raw Treats: Lemon Squares with Carob Sauce

Lemon Coconut Squares

Coming home after work I tend to have this need to go in the kitchen and make something, and it’s not because I’m hungry. It’s because of the possibilities that can come from putting flavours together. Which makes me wish I had discovered this liking for the kitchen at a much younger age – I’d had spent hours with my dad, yes my dad not my mom, in the kitchen watching him whip up tomorrow’s dinner. My mom wasn’t one to enjoy much time in there but she did make the meanest spinach pie!

Now, I’m having to learn as I go and having a blast along the way. So tonight I {un}baked myself some lemon squares!

Lemon Squares with Coconut

Ingredients:
1 cup almonds
1 1/2 cups dates, pitted
1/2 tbs sea salt (I found this to be a bit much)
Juice of 1 lemon
Zest of 1 lemon
1 cup dried shredded coconut

Directions:
In food processor, chop almonds into small pieces. Use some of the powdered almonds as a base for the bottom of your 8 – 9 inch pan.

Mix remaining ingredients in with the chopped almonds in your food processor.

Press mixture into pan.

Let chill for about an hour. Cut and serve.

Carob Sauce

Ingredients:
1/2 cup dates, pitted
1 cup filtered water
1/2 cup carob powder
1/4 cup extra virgin olive oil

Directions:
Blend all ingredients together until smooth.

Drizzle or pour onto read-to-serve lemon square.
