I think I may just have discovered the fastest recipe that’s not labeled as “fast food”. It only takes about 10 minutes from the stove to the plate and it can be made into a wrap if you want it on the go! Sprinkle some almond slivers on top to give it a bit more substance. • 1 handful of fresh kale, leaves
• 1/2 large tomato, chopped
• 2 bunch green onions, diced
• 1 tsp coconut oil
• 1 cup wild brown rice
• 2 cups water
• feta cheese
• pinch of salt & pepper
In a medium pot bring water to a boil, then add rice. Let simmer.
In a pan, heat oil over medium heat; cook onions until softened. Stir in tomato and kale for about 2 minutes, until the kale is tender. Add salt and pepper and stir it into the mix. Remove from heat.
Serve kale mix over rice and top off with some crumbled feta!brown rice kale tomato wrap
